Title: a culinary experience
Post by: salad on April 21, 2008, 09:47:32 AM
yester day was my wifes bday. i made her breakfast in bed, poached egg, bacon, croissant, strawberries, cappuccino, and a rose.

then we went shopping for a dining table (for about an hour), then drove the coast and had lunch beach front at the Poseidon.

house salad with baby greens with citrus-balsalmic vinaigrette, madarin oranges, tomato, blue cheese and toasted pine nuts.

clam chowder

cajun spiced seared ahi with soy, wasabi and ginger

i had two pales, she had a margarita with cranberry (?)

came home, she took a nap and i spent three hours preparing a kick ass thai dinner, everything from scratch (including chili paste).

drop kids off at neighbors.

chili paste -red chillies, garlic, shallots, oil. pounded the shit out of via mortal and pestle for 30 minutes.

cucumbers in a white viniger sauce with sugar, garlic, shallots and serrano chili

fragrant rice - rice mixed with a paste created from cilantro, shallots, serrano, garlic, oil, brown sugar, fish sauce

satay chicken with peanut sauce - chicken is marinated in cocnut milk with corriander, cumin, tumeric, brown sugar, fish sauce, garlic and ginger. peanut suace made from peanut butter (not from scratch), chili paste, coconut milk, lime juice, fish sauce, ginger and garlic.

main course was shrimp stirfried with vegies in chili paste - 1/2 lb shrimp, brown sugar, oil, lots of chili paste, yellow and red bell pepper, onion, fish sauce, garlic, serrano chili.

everything turned out damn near perfect, not to spicey, but a kick. went white route with a bottle of grgich hills chard.

Sounds like a great dinner- all you need is kaffir lime leaves and lemon grass, both grow well in gardens or pots.
